Dans les ann\u00e9es quatre-vingts, la production de spiritueux en Suisse repr\u00e9sentait 80\u00a0% du march\u00e9 par rapport aux produits import\u00e9s. Cette part a fondu comme neige au soleil et se situe actuellement \u00e0 moins de 13\u00a0%. Cette r\u00e9duction a eu des effets consid\u00e9rables sur la culture et sur le nombre d'arbres fruitiers dans notre pays. Des millions d'arbres fruitiers ont disparu, passant, en l'espace de 60 ans, de 14 \u00e0 2,3 millions, g\u00e9n\u00e9rant un impact sur notre paysage et des cons\u00e9quences au niveau \u00e9cologique. Les spiritueux repr\u00e9sentent actuellement 20\u00a0% de la consommation d'alcool dans notre pays. Le monopole toujours existant est dans les mains de la R\u00e9gie f\u00e9d\u00e9rale des alcools qui se charge notamment de l'administration des contr\u00f4les. Les entraves au commerce et le manque en mati\u00e8re de formation de base et de formation continue ne sont certainement pas \u00e9trangers \u00e0 cette situation.
